Recipes - Used by families using Atkins for seizure
management
Cheeseburger Pie
1 pound ground beef
scant onion powder
1 Tbs Heavy Whipping Cream (add enough water to make 1 ½ cups liquid
3/4 cup Carbsense Baking Mix
3 medium eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheese
1 Tbs prepared yellow mustard (optional)
Get out a 10" iron skillet.
Cook the hamburger and onion powder in it over medium heat.
Break the meat up into smallish pieces with a fork
and cook it until there is no more pink showing.
Drain off the fat if necessary.
While the meat is cooking get out a medium sized bowl.
In it combine the milk, baking mix, eggs, salt and pepper.
Mix very well with a whisk, or you can combine it in a blender.
You want it pretty smooth.
When the meat is well cooked and drained put into prepared pie plate
you can put mustard on top if you'd like,
pour the batter over it in the hot skillet.
Sprinkle the cheese on top.
Bake the dish at 400° for about 35 minutes,
longer if need be.
It should be puffed up and brown on top when it is done.
Remove the pan from the oven and cut it into 8 wedges.

Two Variations for Cheeseburger Pie:
Substitute 12 slices of crispy fried
(nitrate free) bacon for the ground beef
and use Swiss Cheese.
Also add three chopped scallions.
Prepare and cook as for Cheeseburger Pie
Another variation is Chicken and Broccoli Pie:
Brown and drain 1 pound of ground chicken.
Line the bottom of a pie dish that has been
sprayed with bakers spray (i.e. PAM)
Sprinkle the meat with Mrs. Dash Seasoning.
Spread one small box of defrosted and drained
chopped broccoli over the meat.In a seperate bowl mix 3 eggs,
add 2 Tablespoons of heavy cream
(mixed with enough water to make 1 1/2 cups liquid).
Then stir in 3/4 cup Carbsense Baking Mix
.
When throughly mixed pour over the meat and broccoli mixture.
Sprinkle this with about a cup of low carb cheese
(parmesan, cheddar, American, or a mixture).Bake in a 400 degree oven for about
30 minutes till nicely browned. |
